We installed a single handle Price Pfister Faucet. If I don’t turn the water on all the way it shuts off on its own. Any ideas why this might be happening?

A water saving feature?
They are now installing water saving features on faucets and shower heads. It could be a water saving device. Most can be disabled. But local codes may prevent it.
It could be haunted.
I’ve been having the same problem for quite some time. It will stay on if I turn it on full blast. But anything less than that and it shuts off by itself. Very annoying.
I think it’s a design flaw resulting from POOR ENGINEERING…the weight of the handle is too heavy on the handle side, not enough counter-weight.
As for it being a water-saving device, I rather doubt it. After all, if you have to turn the thing on full-blast just to get it to stay on, that’s wasting more water than it’s saving!
